INGREDIENTS

2 spoons of olive oil/til ka tael
1 teaspoon of rai
2 stalks of curry patta
Salt to taste
Milk of a brown coconut
Vegetables of your choice preferably carrot, broccoli, beans, mushroom, red or yellow capsicum, cauliflower
Use fresh curry leaves for authentic aroma.

Instructions

Have the oil on heat and add rai and curry patta
Add the vegetables and cook for 2-3 minutes until they are cooked and soft
Add coconut milk and bring to it to boil
Serve with brown/red/white rice
Bonus: You can make a chutney of the remaining coconut milk
Add 2-3 spoons of water, a green chilli, an inch of ginger, salt to taste, and grind in a mixer
Heat two teaspoonfuls of oil
Add 1 small spoon of rai and 1 small spoon of white urad
Add to the coconut mix, stir and serve
