Wash, rinse and drain the mushrooms
Add a little lemon juice to ensure white colour and steam
Let it cool and then cut into quarters
Wash and cut the palak and steam it
Let it cool and then puree in a blender (or roughly chop)
Peel and chop the onions
Heat a pan and add jeera seeds letting them splutter
Add the crushed garlic and sauté till it turns light brown
Add chopped onions, ginger, green chili and sauté till the onions turn a light brown
Add powder masalas and sauté for 2 minutes
Add chopped tomatoes and sauté
Add a little water and let it simmer until the tomatoes are cooked
Add the prepared spinach, quartered mushrooms and sauté
Check seasoning
Incorporate the nut or seed paste and mix well
serve hot
