Add sesame oil to medium pan. Crumble tofu into the pan and fry for 2 mins.
Add Kala Namak and turmeric and fry for 2 more mins until tofu is yellow all over, a little dehydrated, then remove from pan.
Add neutral oil to pan and turn heat up to high. Add rice and quickly stir fry for 3 mins until coated with oil and piping hot.
Add garlic, fry for 1 min, add tofu scramble and soy sauce and sliced spring onion, fry for another min.
Transfer to a bowl with your wings and garnish with some more spring onion.
