In a large mixing bowl, combine grated tofu, mashed chickpeas, grated carrot, chopped capsicum, chopped onion, green chillies, ginger-garlic paste, garam masala, cumin powder, and salt. Mix well until all ingredients are combined.
Shape the mixture into long cylindrical kebabs.
Heat oil in a pan over medium heat.
Place the kebabs in the pan and cook for about 5–7 minutes on each side, or until golden brown and cooked through.
Remove from heat and garnish with fresh coriander leaves.
Serve hot with mint chutney or your choice of dip.
