In a bowl, mix the plant-based curd, ginger-garlic paste, lemon juice, garam masala, turmeric powder, red chilli powder, cumin powder, and salt to make a marinade.
Add the cubed tofu to the marinade and mix gently to coat. Let it marinate for at least 30 minutes.
Preheat the oven to 200°C.
Thread the marinated tofu, capsicum, and onion onto skewers.
Brush the skewers with oil and place them on a baking tray.
Bake in the preheated oven for 15–20 minutes, turning halfway through, until golden and slightly charred.
Garnish with fresh coriander leaves and serve hot.
