INGREDIENTS

200–250 g Vegan Sausage
2 Whole Wheat Buns
100 g Chickpeas (boiled)
50 g Vegan Mayo
50 g Chopped Onion
30 g Chopped Tomato
20 g Chopped Coriander Leaves
1 Green Chilli (finely chopped)
Salt to taste
Black Pepper to taste
Experiment with different toppings like pickles or mustard.
For added crunch, include some grated carrots.

Instructions

Cook the vegan sausages in a pan over medium heat until browned.
In a bowl, mix the boiled chickpeas, chopped onion, tomato, coriander leaves, green chilli, salt, and black pepper to make the chickpea salad.
Slice the whole wheat buns and lightly toast them if desired.
Spread vegan mayo on the inside of each bun.
Place the cooked vegan sausage in each bun, then top with the chickpea salad.
Serve immediately with extra green chillies or sauces if desired.
