Heat oil in a pan over medium heat.
Add chopped onion and green chillies, sauté until onions are translucent.
Add chopped capsicum and sauté for another 2 minutes.
Pour in the vegetable broth and bring to a boil.
Add the Maggi noodles and cook for 2 minutes.
Stir in the plant-based protein and cook for another 2 minutes until noodles are soft.
Season with salt to taste and garnish with fresh coriander leaves before serving.
