Heat oil in a pan and add cumin seeds.
Once they splutter, add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chillies, and sauté for a minute.
Add chopped tomatoes, turmeric powder, red chilli powder, and salt. Cook until tomatoes are soft.
Add chopped jackfruit and mix well.
Pour in coconut milk and bring to a boil.
Reduce heat and simmer for 20 minutes until jackfruit is tender.
Stir in garam masala and cook for another 5 minutes.
Garnish with fresh coriander leaves and serve hot.
