INGREDIENTS

300–400 g tofu, cubed
200 g mixed vegetables (capsicum, carrots, peas)
2 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon ginger-garlic paste
2 medium onions, finely chopped
2 medium tomatoes, pureed
1 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
100 ml water
Press tofu for 15 minutes to remove excess water for better texture.
Adjust spices according to your heat preference.

Instructions

Heat oil in a pan and add cumin seeds.
Once they splutter, add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté for a minute.
Pour in the tomato puree and cook until the oil separates.
Add turmeric powder, red chilli powder, and salt; mix well.
Add the mixed vegetables and tofu; stir gently to coat.
Pour in water, cover, and cook for 10 minutes.
Sprinkle garam masala and mix.
Garnish with fresh coriander leaves before serving.
