Vegan Cheese Pizza

INGREDIENTS

200 g pizza base
100 g cashew nuts (soaked)
30 g nutritional yeast
50 ml water
1 tsp garlic powder
1 tsp lemon juice
100 g tomato sauce
100 g mixed vegetables (bell peppers, onions, mushrooms)
10 g dried oregano
Salt to taste
Fresh coriander leaves for garnish
Soak cashews for at least 4 hours for a smoother cheese.
Experiment with different vegetables for added flavour.

Instructions

Preheat the oven to 220°C.
Blend soaked cashew nuts, nutritional yeast, water, garlic powder, lemon juice, and salt until smooth to make the cashew cheese.
Spread tomato sauce evenly on the pizza base.
Add the cashew cheese on top of the sauce.
Layer mixed vegetables over the cheese.
Sprinkle dried oregano on top.
Bake in the preheated oven for 15 minutes or until the base is golden.
Remove from the oven, garnish with fresh coriander leaves, and serve hot.
