Preheat the oven to 220°C.
Blend soaked cashew nuts, nutritional yeast, water, garlic powder, lemon juice, and salt until smooth to make the cashew cheese.
Spread tomato sauce evenly on the pizza base.
Add the cashew cheese on top of the sauce.
Layer mixed vegetables over the cheese.
Sprinkle dried oregano on top.
Bake in the preheated oven for 15 minutes or until the base is golden.
Remove from the oven, garnish with fresh coriander leaves, and serve hot.
