Soak cashew nuts in water for at least 4 hours, then drain.
In a blender, combine soaked cashew nuts, nutritional yeast, lemon juice, and water.
Blend until smooth, adding more water if needed to achieve a creamy consistency.
Season with salt and blend again.
If desired, add chopped green chillies for spice and blend briefly.
Transfer to a serving bowl and garnish with fresh coriander leaves.
Serve as a spread or dip with your favourite snacks.
