INGREDIENTS

200–250 g soy chunks
1 litre vegetable broth
1 medium onion, chopped
2–3 cloves garlic, minced
1 medium carrot, diced
1 medium potato, diced
2–3 green chillies, slit
1 tsp ginger paste
1 tsp turmeric powder
Salt to taste
Fresh coriander leaves for garnish
1 tbsp oil (optional)
For extra flavour, add a squeeze of lemon juice before serving.
You can add other vegetables like peas or corn for variety.

Instructions

Soak soy chunks in warm water for 15 minutes, then drain.
In a pot, heat oil over medium heat.
Add chopped onion and sauté until translucent.
Stir in minced garlic and ginger paste; cook for 1–2 minutes.
Add diced carrot and potato; sauté for another 5 minutes.
Mix in turmeric powder and green chillies.
Pour in vegetable broth and bring to a boil.
Add soaked soy chunks and salt; simmer for 20 minutes.
Adjust seasoning and garnish with fresh coriander leaves before serving.
