Step 1: Make the Dough
Mix flour, salt, and oil in a bowl.
Gradually add water, knead into a soft, smooth dough.
Cover and rest for 20–30 minutes.
Step 2: Prepare the Filling
In a bowl, mix grated vegan cheese with green chilies, onion, coriander, pepper, chili flakes, and chaat masala.
Step 3: Shape the Parathas
Divide dough into equal balls (about 6).
Roll one ball into a small disc (4–5 inches).
Place 2–3 tbsp “cheese” filling in the center.
Bring edges together like a pouch, seal well.
5Flatten gently, dust with flour, and roll out carefully into a 6–7 inch paratha.
Step 4: Cook the Parathas
Heat a tawa/griddle.
Place paratha, cook until bubbles appear. Flip.
Apply oil, cook until golden brown spots appear.
Flip again, press edges with spatula, and cook evenly.
Repeat with all parathas.
Step 5: Serve
Serve hot with vegan curd, pickle, or green chutney.
Best eaten hot while the cheese is gooey.
